Po' Boys debuts new food truck

The bright green Po' Boys truck debuts this month.

Food truck fans rejoice.

A new mobile eatery will soon make its way into southern Delaware, offering authentic creole and cajun vittles.

Mike Clampitt, owner of Po' Boy Creole & Fresh Catch in Milton, hopes to have his truck on the road before Christmas. Clampitt already has a few spots along Route 1 offering to let him park the truck and set up shop.

"I'm waiting on final approvals but everything is in motion, it's finally happening," he said. "I can't wait to take Po' Boys to the streets."

The truck's menu will feature fan favorites such as homemade gumbo and corn bread, oyster, shrimp and crawfish po' boys, jambalaya, red beans ad rice and Clampitt's famous muffuletta.

It's made with a flavorful blend of Italian cold cuts and cheeses, paired with an olive tapenade spread. The traditional version originated on dense Italian bread, called muffuletta, but Clampitt prefers to use a crisp French bâtard.

The complex sandwich owes its origins to the lesser-known Italian influence on Creole and Cajun cooking that flourished in the French Quarter, he said.

Clampitt will also offer warm, fluffy beignets made to order.

"They melt in your mouth," he said. "They're amazing."

The custom-made Po' Boy truck will frequent Sussex County and attend festivals and local events, such as Milton's Truckin' Tuesday and Rehoboth Beach's Food Truck Friday at Epworth United Methodist Church. Additionally, the truck will offer catering services, something Clampitt's restaurant kitchen hasn't allowed him to do.

Located on Route 16, his New Orleans inspired restaurant operates on reservations to ensure the cozy space — of 30 seats — isn’t overbooked. And up until now, providing for large parties and gatherings has been out of reach.

"I knew going in that the space was small, very intimate," he said. "But that's what I like about it. That's what makes it special. But making my customers happy is obviously, extremely important to me.  Ever since I've opened, people have asked me 'When are you going to expand?' So the truck is the perfect solution. I'm able to do so much more but keep what is magic in Milton.”
