New pizza shop, Your Pie, opens in Salisbury

With all the competition in the world of pizza, Kirtan Patel knows the more unique, the better. That's why he decided to open Your Pie, a fast-casual pizza chain that dares to reinvent the way most people think about creating and serving pies.

Unlike most pizza eateries, Your Pie encourages diners to let their culinary creativity run wild.

Your Pie had its grand opening on Thursday, Sept. 23, 2016. at the Salisbury Mall.

The restaurant's "down the line" concept is simple: choose the dough, cheese and toppings, and leave with a personally crafted masterpiece in minutes.

"The customer has all of the power," Patel said, who always wanted to open a one-of-a-kind pizza shop.

"I wanted to offer quick but I also wanted to offer quality," he said. "That's why I did my research."

Patel's store, located next to The Centre at Salisbury's Regal movie theater, is part of a rapidly growing pizza chain with nearly 40 locations nationwide.

The company's founder, Drew French, opened the first location in Athens, Georgia in 2008. A culinary entrepreneur since his teenage years, French set out to make pizza possibilities limitless. He combined his passion for innovative restaurant concepts and old family recipes from the island of Ischia to create quickly prepared pizza, without sacrificing flavor.

Your Pie uses hand-tossed dough, fresh ingredients, homemade pizza sauces and salad dressings, and offers vegan, vegetarian and gluten-free options, as well as traditional pies, paninis and gelato. The restaurant's brick oven operates at 550 degrees, so meals are baked to perfection in a matter of minutes.

"The concept is genius," Patel said. "I know this community will embrace it."

The 2,500-square-foot restaurant perfectly caters to those, "on the go," he said, but it also features dozens of tables and a fully stocked bar, offering wine and more than 30 local craft brews.

Although Patel is new to the world of pizza, he is no stranger to business. He has lived in the area for nearly a decade and owns Stratosphere Trampoline Park and Tax Free Liquors, both located in Delmar. He pulled from his liquor store connections to offer the most sought after, local, alcohol pairings.
